Although many choose and some have to abide by a gluten-free diet, that doesn’t mean sacrificing sweets as we head into the holiday season! Gluten, for many, can lead to damage and inflammation of the small intestine. Several gastrointestinal problems could result from this, and when you suffer from a chronic illness like Lyme Disease or Osteoarthritis extra inflammation could potentially lead to a larger problem. We decided to set out and make some truly scrumptious gluten-free recipes. Today, we would like to share one of those experiments: our gluten-free peanut butter cookies that you can easily make at home! What you’ll need:
1 Egg
1 Cup of Peanut Butter
1 Cup of Sugar
1 Teaspoon of Baking Soda
Directions:
1. Preheat oven to 325 °F (or 165 ° C).
2.Add the peanut butter, egg, sugar and baking soda into a medium bowl. Mix together until well blended.
3.Roll dough into 1-inch rounds and place onto an ungreased cookie sheet or a cookie sheet lined with parchment paper.
4. Bake cookies for 8-10 minutes, or until the edges are brown. Let them cool for a few moments before transferring to cooling racks.
