Gluten-Free Breakfast Muffins

Mornings are hard. And, as a result, it can be easy to skip breakfast for a few more minutes of sleep. Instead of having to choose between breakfast and sleep, making your breakfast in advance is a great way to ensure that you can have both!

In previous blog posts, we’ve spoken about the reasons someone might choose a gluten-free lifestyle. However, it’s important to understand why chronic Lyme Disease or osteoarthritis sufferers may choose to do so.

A gluten-free diet is one that excludes the protein gluten, which is most commonly found in wheat, barley, and rye. Gluten has been linked to damage and inflammation of the small intestine. And, as a consequence of this, further gastrointestinal problems may occur. When you suffer from a chronic illness such as Lyme Disease or osteoarthritis, any extra inflammation could lead to a larger problem.

These gluten-free breakfast muffins are straightforward to make and incredibly savory! You could easily make these one evening, and have them for the rest of the week as you head out the door.

While making these muffins, do as much prep work as possible. It helps the baking process go smoothly! To start, mix the hash browns with one egg, one cup of cheese, and half of the salt and pepper.

Next, you’ll put the hash brown mixture into the muffin tins and bake for about 15 minutes. While these are baking, whisk together all of your remaining ingredients.Once the hash brown crust is finished, add the eggs, peppers, cheese, and milk blend.

These will also bake for about 15 minutes. And, then enjoy!
