The weather is finally starting to warm up, and flowers are starting to bloom! Come summer, I always start to crave lighter meals and desserts. Chocolate cake will always have a special place in my heart, but there is nothing better than a fluffy rice crispy treat during summer.
This recipe is so inexpensive and simple to make. The hardest task is finding gluten-free crispy rice cereal, but you should be able to find some at any health food store. Finding gluten-free cereal is really important because otherwise, the cereal will contain malt and barley. Which is not gluten-free.
Before we get to the fun part, though, it’s always important to revisit why those who may suffer from a chronic illness may choose a gluten-free lifestyle. A gluten-free diet is one that excludes the protein gluten, which is most commonly found in wheat, barley, and rye. Gluten has been linked to damage and inflammation of the small intestine. And, as a consequence of this, further gastrointestinal problems may occur. When you suffer from a chronic illness such as Lyme Disease or osteoarthritis, any extra inflammation could lead to a larger problem.
